They bake in less time than a loaf cake, though the ingredient quantities are comparable, which means you get to eat your cake faster. And since my love for combining coffee and banana is real (remember I turned that combination years ago into a <a href=\"https:\/\/bakeschool.com\/coffee-banana-smoothie\/\" rel=\"noopener\">coffee banana smoothie<\/a>, still one of my all-time fave smoothie flavours), well, here we go again: coffee and banana together in cake form with a milk <a href=\"https:\/\/bakeschool.com\/chocolate-fudge-frosting\/\">chocolate fudge frosting<\/a>.<\/p>\n\n\n\n<p>I resisted the urge to add cardamom to the cake batter, but please, don't let that stop you. Cardamom would be so awesome in this recipe, as I have proven in this <a href=\"https:\/\/bakeschool.com\/montreals-best-banana-bread-according-to-joe-beef\/\" rel=\"noopener\">cardamom banana bread recipe<\/a>. You may adjust the salt in the cake batter if your salted butter has a lot of salt<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014both granulated sugar and <a href=\"https:\/\/amzn.to\/2TqVqO5\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">light brown sugar<\/a> go in the cake, and icing sugar (also called powdered sugar or confectioner's sugar) in the frosting (sift the icing sugar for the smoothest frosting texture)<\/li>\n\n\n\n<li><strong>eggs<\/strong>\u2014I bake with large eggs, weighing approximately 56 grams (shell on) or 50 grams (shell off). Larger or smaller eggs may result in either a wetter cake or a dryer cake, respectively<\/li>\n\n\n\n<li><strong>mashed banana<\/strong>\u2014mash very ripe bananas that are quite soft and with a blackened peel. If the bananas are too young, they are more starchy, which will have an impact on the taste and texture of the cake<\/li>\n\n\n\n<li><strong>sour cream<\/strong>\u2014I bake with full-fat sour cream (14% fat). If you use lower fat sour cream, the texture of the cake may be dryer<\/li>\n\n\n\n<li><a href=\"https:\/\/bakeschool.com\/how-to-make-vanilla-extract\/\" target=\"_blank\" rel=\"noreferrer noopener\">pure vanilla extract<\/a><\/li>\n\n\n\n<li><strong>all-purpose flour<\/strong>\u2014I bake with bleached all-purpose flour. You can try unbleached, but the texture and rise of the cake may differ<\/li>\n\n\n\n<li><strong>chemical leaveners<\/strong>\u2014you need both <a href=\"https:\/\/bakeschool.com\/leavening-agents-in-baking\/\">chemical leavening agents<\/a>, <a href=\"https:\/\/bakeschool.com\/what-is-baking-powder\/\">baking powder<\/a> and <a href=\"https:\/\/bakeschool.com\/focus-on-baking-soda\/\">baking soda<\/a> in this cake. Feel free to skip it if you want!<\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/2PKecxT\" target=\"_blank\" rel=\"nofollow noreferrer noopener\"><strong>instant espresso powder<\/strong><\/a> is a great way to add coffee to baked goods without adding water. Added to the frosting, it enhances the chocolate flavour but also add a subtle coffee taste that is so nice with chocolate and banana<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>salt<\/strong>\u2014use <a href=\"https:\/\/amzn.to\/3579vF2\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">Diamond Crystal fine kosher salt<\/a>, but if you only have regular table salt, add half the amount because it's saltier<\/li>\n\n\n\n<li><span style=\"color: initial; font-family: -apple-system, BlinkMacSystemFont, &quot;Segoe UI&quot;, Roboto, Oxygen-Sans, Ubuntu, Cantarell, &quot;Helvetica Neue&quot;, sans-serif;\"><strong>chocolate<\/strong><\/span>\u2014I've tested the frosting with both milk and dark chocolate and both work. The flavour will obviously differ<\/li>\n\n\n\n<li><strong>Dutch-processed cocoa powder<\/strong>\u2014I bake with <a href=\"https:\/\/amzn.to\/3amQjEq\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">Cacao Barry extra brute cocoa powder<\/a>, which is a dark cocoa powder with a little over  20 % fat.<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<p>See the recipe card for the exact ingredients and quantities.<\/p>\n<\/div><\/div>\n\n\n\n<h2 id=\"substitutions-and-variations\"   class=\"wp-block-heading\">Substitutions and Variations<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Chocolate<\/strong>\u2014the frosting can be made with milk or dark chocolate but please use high-quality chocolate with a higher percentage of cocoa solids (at least 40 %) otherwise the frosting may lack flavour and be too sweet<\/li>\n\n\n\n<li><strong>Nuts<\/strong>\u2014you can add chopped nuts to the banana cake batter, for example chopped roasted peanuts or toasted walnuts would be excellent here<\/li>\n\n\n\n<li><strong>Coffee<\/strong>\u2014don't like coffee? Skip the coffee grinds and the espresso powder.<\/li>\n\n\n\n<li><strong>Garnishes<\/strong>\u2014I've topped this cake with candied pecans, chopped nuts, but also chocolate sprinkles. Use what you've got!<\/li>\n<\/ul>\n\n\n\n<p>This coffee banana cake has the perfect texture, and it's not too sweet. It's just right for a thick slather of chocolate frosting made from the <a href=\"https:\/\/bakeschool.com\/everything-you-need-to-know-about-the-types-of-chocolate-for-baking\/\">best chocolate for baking<\/a>.
