It's a riff on the classic peanut butter cookie that many of us in North America grew up eating. Sometimes, you'll find the recipe on the back of the label on a jar of regular peanut butter (like Kraft peanut butter).<\/p>\n\n\n\n<p>The cookie recipe below is quite different than these 3-ingredient <a href=\"https:\/\/bakeschool.com\/flourless-peanut-butter-cookies-gluten-free\/\">flourless peanut butter cookies<\/a>, which are gluten-free and made with three basic ingredients (peanut butter, sugar, and an egg). If you use salted butter, you may reduce the amount of salt added to ensure the cookies aren't too salty<\/li>\n\n\n\n<li><strong>peanut butter<\/strong>\u2014I used Kraft all-natural, unsweetened smooth peanut butter (the kind you have to stir). Using regular peanut butter may make these cookies sweeter<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014I like to use both granulated and light brown sugar, but you can also opt to make these cookies with all granulated sugar or all brown sugar<\/li>\n\n\n\n<li><strong>eggs<\/strong>\u2014all my recipes are tested with large eggs and if you use a different size, the results may vary<\/li>\n\n\n\n<li><strong>leavening agents<\/strong>\u2014these cookies are made with <a href=\"https:\/\/bakeschool.com\/focus-on-baking-soda\/\">baking soda<\/a>, not <a href=\"https:\/\/bakeschool.com\/what-is-baking-powder\/\">baking powder<\/a>. Read about <a href=\"https:\/\/bakeschool.com\/kitchen-geekery-baking-soda-vs-baking-powder\/\">baking soda versus baking powder<\/a> if you aren't sure the difference between these chemical leaveners<\/li>\n\n\n\n<li><strong>salt<\/strong>\u2014I used <a href=\"https:\/\/amzn.to\/3579vF2\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">Diamond Crystal fine kosher salt<\/a> in this recipe. If you are using table salt, use half the amount<\/li>\n\n\n\n<li><strong>flour<\/strong>\u2014these recipes were tested with&nbsp;bleached all-purpose flour, but you can also use unbleached flour.<\/li>\n<\/ul>\n\n\n\n<p>Please see the recipe card for the exact list of ingredients and quantities.<\/p>\n<\/div><\/div>\n\n\n\n<h2 id=\"substitutions-and-variations\"   class=\"wp-block-heading\">Substitutions and Variations<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Peanut-free<\/strong>: use a natural nut butter alternative like almond butter or sunflower seed butter (please note that if you make these with sunflower seed butter, the cookies may end up green from the baking soda but will still taste great!)<\/li>\n\n\n\n<li><strong>Chocolate<\/strong>\u2014you can incorporate chocolate chips or chopped chocolate in this cookie dough (up to 175 grams or 1 cup). I prefer dark (semi-sweet) chocolate in these cookies, but white chocolate is also lovely, as in these bakery-style <a href=\"https:\/\/bakeschool.com\/chewy-peanut-butter-cookies\/\">peanut butter cookies with white chocolate<\/a><\/li>\n\n\n\n<li><strong>Shortening<\/strong>\u2014If you make these cookies with shortening instead of butter, they will be thicker and spread even less (because the melting point of shortening is higher than butter). If you choose to use shortening, reduce the flour to 125 grams (1 cup) to ensure they spread enough.<\/li>\n<\/ul>\n\n\n\n<h2 id=\"testing-notes\"   class=\"wp-block-heading\">Testing Notes<\/h2>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>Often, the key to a thicker cookie is to use slightly more flour. Make sure to scrape, stir, and shake well before measuring to ensure a good mix of both components.<\/li>\n<li>To scoop cookies, I use a 1.5 tablespoon cookie scoop <a class=\"thirstylink\" title=\"\u00be oz scoop\" href=\"https:\/\/bakeschool.com\/recommends\/3-4-oz-scoop\/\" target=\"_blank\" rel=\"nofollow noopener\">Amazon<\/a><\/li>\n<li><strong>Peanut-free<\/strong>: use a natural nut butter alternative like almond butter or sunflower seed butter (please note that if you make these with sunflower seed butter, the cookies may end up green from the baking soda but will still taste great!)<\/li>\n<li><strong>Shortening<\/strong>\u2014If you make these cookies with shortening instead of butter, they will be thicker and spread even less (because the melting point of shortening is higher than butter). If you choose to use shortening, reduce the flour to 125 grams (1 cup) to ensure they spread enough.<\/li>\n<li><strong>Chocolate<\/strong>\u2014you can incorporate chocolate chips or chopped chocolate in this cookie dough (up to 175 grams or 1 cup). I prefer dark (semi-sweet) chocolate in these cookies, but white chocolate is also lovely, as in these bakery-style <a href=\"https:\/\/bakeschool.com\/chewy-peanut-butter-cookies\/\">peanut butter cookies with white chocolate<\/a><\/li>\n<\/ul>\n<\/li>\n<li>If you don't press down the scoops of peanut butter cookie dough with a fork, the cookies don't spread out when they bake and remain rounded, a shape similar to how they were scooped.<\/li>\n<li>If you find the fork tines are sticking to the cookie dough too much, coat the back of your fork in a little flour.
