Read about <a href=\"https:\/\/bakeschool.com\/kitchen-geekery-baking-soda-vs-baking-powder\/\">baking soda versus baking powder<\/a> if you aren't sure the difference between the two.<\/li>\n\n\n\n<li><strong>salt<\/strong>\u2014I bake with <a href=\"https:\/\/amzn.to\/3579vF2\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">Diamond Crystal fine kosher salt<\/a>. If using regular table salt, add half the amount listed in the recipe card.<\/li>\n\n\n\n<li><strong>butter<\/strong>\u2014use unsalted butter&nbsp;(diced and kept cold) or if using salted butter, reduce or omit the salt added to ensure the dough isn't overly salty<\/li>\n\n\n\n<li><strong>egg<\/strong>\u2014I always bake with large eggs, which weigh 56 grams with the shell on. If you use a different size of eggs, the dough may too dry or too wet. <\/li>\n\n\n\n<li><strong>cream<\/strong>\u2014you will need enough whipping cream (35 % fat) in the scone dough and also some to brush on top before baking<\/li>\n\n\n\n<li><strong>vanilla<\/strong>\u2014I bake with <a href=\"https:\/\/bakeschool.com\/how-to-make-vanilla-extract\/\" target=\"_blank\" rel=\"noreferrer noopener\">pure vanilla extract<\/a><\/li>\n\n\n\n<li><strong>apple<\/strong>\u2014for these stuffed apple pie scones, you will need both <a href=\"https:\/\/amzn.to\/33pg5p6\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">apple butter<\/a> and fresh apple. Choose an apple variety that holds up to baking<\/li>\n\n\n\n<li><strong>cinnamon<\/strong>\u2014I made these scones with <a href=\"https:\/\/bakeschool.com\/cinnamon-sugar\/\">cinnamon sugar<\/a>, rather than ground cinnamon to add some sweetness to the filling and topping since there isn't much sugar in the dough or the filling.<\/li>\n<\/ul>\n\n\n\n<p>Please see the recipe card for the exact quantities and ingredients.<\/p>\n<\/div><\/div>\n\n\n\n<h2 id=\"substitutions-and-variations\"   class=\"wp-block-heading\">Substitutions and Variations<\/h2>\n\n\n\n<p>Your options for variations substitutions are limited, but here are a few suggestions:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Scones without eggs<\/strong>: replace the egg with 60 mL (\u00bc cup) more cream. I do this quite often and it works great!<\/li>\n\n\n\n<li><strong>Cinnamon sugar<\/strong>: if you don't want to make cinnamon sugar, just sprinkle generously the filling and dough with granulated sugar and cinnamon. Alternatively, you can garnish the tops of the scones with turbinado sugar before baking. This will give them a lovely crunch on the outside.<\/li>\n\n\n\n<li><strong>Apple butter<\/strong>\u2014I buy apple butter, but you could make it by cooking down apple sauce (or by making apple sauce and then boiling it down into a thick, dark spread). You could replace the apple and apple butter with <a href=\"https:\/\/bakeschool.com\/spiced-apple-jam\/\">apple jam<\/a>.<\/li>\n\n\n\n<li><strong>Apples<\/strong>\u2014replace them with pear. You could even use canned pear. I prefer to buy canned pears in syrup because the taste is better. I used canned pears for these <a href=\"https:\/\/bakeschool.com\/chocolate-scones\/\">pear scones with chocolate<\/a>.<\/li>\n<\/ul>\n\n\n\n<p>Another option for the filling is to use a commercial apple pie filling instead of the combination of apple butter and diced apple. This would work fine, but personally I'm not a huge pan of canned apple pie filling from the grocery store, which can be somewhat gelatinous in texture.<\/p>\n\n\n\n<h2 id=\"other-filling-ideas-for-stuffed-scones\"   class=\"wp-block-heading\">Other Filling Ideas for Stuffed Scones<\/h2>\n\n\n\n<p>When I stuff scones, I like to combine a spread or preserve with some fruit. Here are a few ways you can change these up according to the seasons:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>jam<\/strong>\u2014use homemade <a href=\"https:\/\/bakeschool.com\/rhubarb-juniper-berry-jam\/\">rhubarb jam (no pectin)<\/a>, <a href=\"https:\/\/bakeschool.com\/plum-jam-2-ways\/\">plum jam<\/a>, or <a href=\"https:\/\/bakeschool.com\/spiced-apple-jam\/\">spiced apple jam<\/a> instead of the apple butter<\/li>\n\n\n\n<li><strong>marmalade<\/strong> would make a great replacement for the apple butter, like this <a href=\"https:\/\/bakeschool.com\/how-to-make-marmalade\/\">orange marmalade<\/a>, <a href=\"https:\/\/bakeschool.com\/grapefruit-marmalade\/\">grapefruit marmalade<\/a>, or even <a href=\"https:\/\/bakeschool.com\/three-fruit-marmalade\/\">three-fruit marmalade<\/a>.<\/li>\n\n\n\n<li><strong>spreads<\/strong>\u2014try this <a href=\"https:\/\/bakeschool.com\/nutella-with-any-other-nut-is-just-as-delicious\/\">homemade Nutella<\/a> without hazelnuts or <a href=\"https:\/\/bakeschool.com\/maple-butter\/\">homemade maple butter<\/a><\/li>\n\n\n\n<li><strong>fresh fruit<\/strong>, chopped apple, chopped pear, stone fruits, berries, etc<\/li>\n<\/ul>\n\n\n\n<p>Mix and match these to see what you like. For a blueberry stuffed scone, I'd combine <a href=\"https:\/\/bakeschool.com\/blueberry-jam\/\">blueberry jam<\/a> and fresh blueberries as the filling.
