Technically \"4 eggs\" isn't a volume measurement at all, but 1-2-3-4 is easy to remember.<\/p>\n\n\n\n<p>The ratio 1-2-3-4 is by volume, but I actually prefer to convert it to weight measurements before I bake. You can use this <a href=\"https:\/\/bakeschool.com\/baking-conversions\/\">list of baking conversions<\/a> to help you convert any baking recipe from cups to grams or ounces.<\/p>\n\n\n\n<p>This is the same ratio I use for the <a href=\"https:\/\/bakeschool.com\/a-cinnamon-chocolate-chip-bundt-to-celebrate-national-bundt-day\/\">chocolate chip bundt cake<\/a> and the <a href=\"https:\/\/bakeschool.com\/apple-bundt-cake-with-salted-caramel-glaze\/\">apple bundt cake<\/a>. If you aren't sure the difference, read about <a href=\"https:\/\/bakeschool.com\/kitchen-geekery-baking-soda-vs-baking-powder\/\">baking soda vs baking powder<\/a> to find out more<\/li>\n\n\n\n<li><strong>salt<\/strong>\u2014I bake with <a href=\"https:\/\/amzn.to\/3579vF2\" target=\"_blank\" rel=\"nofollow noreferrer noopener\">Diamond Crystal fine kosher salt<\/a>, which is less salty than table salt. If you want to use table salt, add half the amount<\/li>\n\n\n\n<li><strong>butter<\/strong>\u2014I prefer to bake with unsalted butter&nbsp;and add the salt myself later. If you are using salted butter, add less salt to the cake batter<\/li>\n\n\n\n<li><strong>orange zest<\/strong> from a fresh naval orange<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014use granulated sugar in the cake batter and icing sugar to make the orange icing<\/li>\n\n\n\n<li><strong>eggs<\/strong>\u2014use large eggs<\/li>\n\n\n\n<li><a href=\"https:\/\/bakeschool.com\/how-to-make-vanilla-extract\/\" target=\"_blank\" rel=\"noreferrer noopener\">pure vanilla extract<\/a><\/li>\n\n\n\n<li><strong>sour cream<\/strong>\u2014use full-fat (around 14% fat) sour cream for the best texture<\/li>\n\n\n\n<li><strong>orange juice<\/strong>\u2014I prefer to use \"premium\" orange juice from the grocery store, which has more flavour. You can also use a frozen orange juice concentrate diluted with water. Since you are pouring it on an orange cake, I flavoured the glaze with orange juice, but you could also use lemon juice for a more tart glaze or even plain milk to make it more neutral. If you go with milk, feel free to add a little vanilla extract or even a couple of drops of almond extract since almonds and orange go so well together.<\/p>\n\n\n\n<p>The secret to the glaze is to keep it very thick. You don't need to use more than 30 mL (2 tablespoons) of liquid for 125\u2014160 grams (1\u20131-\u00bc cup(s)) of icing sugar. This ratio makes a thick glaze, but you can still pour it on a <a href=\"\/category\/bundt-cake-recipes\">bundt cake<\/a>. It will run down decoratively without flowing into a pool at the bottom.
