Please read about baking soda versus baking powder if you aren't sure the difference!<\/li>\n\n\n\n<li><strong>spices<\/strong>\u2014pumpkin pie spice mix works great here or a combination of cinnamon, ginger, nutmeg, and cloves<\/li>\n\n\n\n<li><strong>salt<\/strong>: preferably <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Diamond Crystal Fine Kosher Salt\" href=\"https:\/\/amzn.to\/3Yg6ygA\" data-linkid=\"40340\" data-shortcode=\"true\">Diamond Crystal fine kosher salt<\/a>, but if you are using regular table salt, halve the amount so the cake isn't too salty.<\/li>\n\n\n\n<li><strong>oil<\/strong>\u2014using canola oil enhances the vegetal flavour of the pumpkin<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014you can use either granulated sugar or brown sugar. Brown sugar will give the pumpkin bread more flavour<\/li>\n\n\n\n<li><strong>eggs<\/strong>, specifically large eggs<\/li>\n\n\n\n<li><strong>pure vanilla extract<\/strong>, either <a href=\"https:\/\/bakeschool.com\/how-to-make-vanilla-extract\/\">homemade<\/a> or store-bought<\/li>\n\n\n\n<li><strong>pumpkin pur\u00e9e<\/strong>, either canned or strained homemade pumpkin pur\u00e9e to remove excess water. Read about <a href=\"https:\/\/bakeschool.com\/homemade-pumpkin-puree-for-baking\/\">homemade pumpkin pur\u00e9e<\/a> if you are unsure about how to remove the water and why<\/li>\n\n\n\n<li><strong>cranberries<\/strong>\u2014I prefer to bake this pumpkin cake with dried cranberries<\/li>\n<\/ul>\n\n\n\n<p>Please see the recipe card for the exact ingredients and quantities.<\/p>\n\n\n\n<h2 id=\"substitutions-and-variations\"   class=\"wp-block-heading\">Substitutions and Variations<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sugar<\/strong>: I've baked this recipe with all granulated sugar and a <strong>combination of light brown sugar and granulated sugar.<\/strong> Both work. If you are using a <strong>liquid sugar<\/strong>, like maple syrup, your batter might be wetter so you might have to either use less: replace only a portion of the sugar with maple syrup to avoid adding too much liquid to the recipe and throwing off the texture, or add a little more flour (this may require additional tests). If you want to try this recipe with honey, be careful: honey will lead to a darker quick bread and more browning<\/li>\n\n\n\n<li><strong>Oil<\/strong>: replace the 125 mL (\u00bd cup) of canola oil in the recipe with the same volume of another oil (perhaps a light-tasting olive oil or sunflower oil!) or you could replace the oil with the same amount or up to 170 mL (\u2154 cup) of unsalted butter, melted and cooled before incorporating in the recipe. You would consider adding a little more butter than oil to the recipe because butter is only 80 % fat, whereas vegetable oils are 100 % fat. So to keep the amount of fat constant, you'd need slightly more butter than oil.&nbsp;<\/li>\n\n\n\n<li><strong>Cranberries<\/strong>: use dried cranberries, not fresh or frozen because the latter may lead to gummy areas around the fruit from the excess moisture. Not the end of the world, but not ideal. Add the flour-coated dried cranberries to the pumpkin cake batter (<strong>image 5<\/strong>) and fold them in.<\/p>\n\n\n\n<p class=\"has-luminous-vivid-amber-background-color has-background\"><strong>Tip<\/strong>: Don't overmix the cake batter because it may create a dry cake that may have bigger bubbles. Undermix the mixture of dry and wet ingredients before adding the cranberries.
