Still, when I tested out baking chocolate chip cookies with alternative flours, including oat, buckwheat, rye, spelt, and corn, these spelt chocolate chip cookies stood out. They are among my faves, along with the classic <a href=\"https:\/\/bakeschool.com\/white-chocolate-macadamia-cookies\/\">white chocolate macadamia cookies<\/a> I love so much.<\/p>\n\n\n[feast_advanced_jump_to]\n\n\n<h2 id=\"ingredients\"   class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p>Chocolate chip cookies are so easy to make and the basic ingredients are always butter, sugar, eggs, flour, and of course chocolate. Just adjust the salt in the recipe accordingly, otherwise, your cookies may be too salty<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014we are using a combination of granulated sugar&nbsp;(to help give cookies their crispy edges) and brown sugar to add the molasses flavour and balance out the flavour of the egg. Brown sugar may also lead to a slightly thicker cookie<\/li>\n\n\n\n<li><strong>vanilla extract<\/strong>&nbsp;adds depth of flavour and sweetness to these cookies. Don't skimp on this ingredient!<\/li>\n\n\n\n<li><strong>large eggs<\/strong>\u2014don't use smaller eggs because your cookies may be too dry, but don't use extra large eggs because they could affect the texture too. Sometimes too many eggs can make a cakey cookie!<\/li>\n\n\n\n<li><strong>flour&nbsp;<\/strong>is needed to bind all the ingredients together and give the cookies structure so that they hold their shape. If you don't use enough flour, your cookies may spread too much as they bake, especially given the amount of butter you will use. For this recipe, we are using spelt flour<\/li>\n\n\n\n<li><strong><a href=\"https:\/\/bakeschool.com\/focus-on-baking-soda\/\">baking soda<\/a><\/strong>, a base (alkaline), is the <a href=\"https:\/\/bakeschool.com\/leavening-agents-in-baking\/\">leavening agent<\/a>&nbsp;in this cookie recipe. It contributes to browning and helps your&nbsp;<a href=\"https:\/\/bakeschool.com\/why-chill-cookie-dough\/\">cookies to spread<\/a> Don't confuse it with&nbsp;<a href=\"https:\/\/bakeschool.com\/what-is-baking-powder\/\">baking powder<\/a>, which would cause the cookies to puff up as they bake. Don't skip it. I like to use Diamond Crystal fine kosher salt, but table salt will work, though the cookies will be saltier and you may want to halve the salt in that case.<\/li>\n\n\n\n<li><strong>chocolate<\/strong>\u2014use either dark chocolate (bittersweet or semisweet), milk chocolate, or even white chocolate. You can use chocolate chips or chopped chocolate, but remember chocolate chips will hold their shape, while chopped chocolate will melt and ooze.<\/li>\n<\/ul>\n\n\n\n<p>Please see the recipe card for the exact ingredients and quantities.<\/p>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<h2 id=\"replacing-all-purpose-with-spelt-flour-in-cookies\"   class=\"wp-block-heading\">Replacing All-Purpose with Spelt Flour in Cookies<\/h2>\n\n\n\n<p>If you compare spelt flour vs all-purpose flour, you'll find that spelt has a little less gluten, which means for this chocolate chip cookie recipe, I used 65 grams (\u00bd cup) more spelt flour as compared to my <a href=\"https:\/\/bakeschool.com\/how-to-make-the-best-chocolate-chip-cookies\/\">basic chocolate chip cookie recipe<\/a>. Adding slightly more spelt flour means you can achieve a <a title=\"Thick cookies and reasons cookies don't spread\" href=\"https:\/\/bakeschool.com\/thick-cookies-and-reasons-cookies-dont-spread\/\">thick chocolate chip cookie that doesn't spread<\/a> too much, which is a typical problem when baking cookies with alternative flours that are lower in gluten or gluten-free. If you struggle with thin or flat cookies, read about <a href=\"https:\/\/bakeschool.com\/flat-cookies\/\">the reasons cookies spread<\/a>.<\/p>\n\n\n\n<h2 id=\"other-substitutions-and-variations\"   class=\"wp-block-heading\">Other Substitutions and Variations<\/h2>\n\n\n\n<p>Like with any chocolate chip cookie recipe, you have a lot of options when it comes to substitutions and variations:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Chocolate<\/strong>: use white, milk, or dark chocolate, either in the form of chocolate chips or chopped chocolate. Use the best quality chocolate you can.<\/li>\n\n\n\n<li><strong>Cocoa<\/strong>: replace a portion of the flour with cocoa powder, as I did for these delicious <a href=\"https:\/\/bakeschool.com\/chocolate-chocolate-chip-cookies\/\">chocolate chocolate chip cookies<\/a><\/li>\n\n\n\n<li><strong>Nuts<\/strong>: use chopped walnuts or pecans (like in these <a href=\"https:\/\/bakeschool.com\/chocolate-chip-cookies-with-pecans\/\">chocolate chip cookies with pecans<\/a>), or skip them and add more chocolate (note if you simply omit the nuts, your cookies may spread more).<\/li>\n\n\n\n<li><strong>Sugar<\/strong>: use white or brown sugar (either light or dark)\u2014the type of sugar will have a little impact on the spread of the cookies (brown sugar cookies may spread less). Overall, the bigger impact is on flavour. At 400 \u00b0F, the dough doesn't spread as much, and the cookies stay quite thick. Bake your chocolate chip cookies at 375 \u00b0F or even 350 \u00b0F to encourage spreading for slightly thinner cookies. In general, the ratio of flour to sugar and butter ensures these cookies won't spread too much.<\/p>\n\n\n\n<h2 id=\"troubleshooting-chocolate-chip-cookies\"   class=\"wp-block-heading\">Troubleshooting Chocolate Chip Cookies<\/h2>\n\n\n\n<p>If you experience your <a href=\"https:\/\/bakeschool.com\/cookies-very-dark-on-the-bottom-completely-raw-in-middle\/\">cookies are burning on the bottom<\/a> and staying raw in the middle, it could be the material of your sheet pan (dark <a href=\"https:\/\/bakeschool.com\/baking-pans\/\">bakeware<\/a> absorbs more heat), your oven temperature, or even too much <a href=\"https:\/\/bakeschool.com\/focus-on-baking-soda\/\">baking soda<\/a> in your recipe.<\/p>\n\n\n\n<p>If your cookies are spreading too much, you may have mismeasured an ingredient or your oven temperature is set too low. Another culprit could be the material of your baking sheet. If you are baking with insulated bakeware like an air-filled sheet pan, this could slow the set of the cookie edges, leading to spreading and thinner cookies. The same goes with silicone baking mats which can have a similar effect.<\/p>\n\n\n\n<h2 id=\"storage\"   class=\"wp-block-heading\" >Storage<\/h2>\n\n\n\n<p>Once the baked cookies have cooled&nbsp;<strong>completely<\/strong>&nbsp;(emphasis on the completely!), I store my freshly baked spelt flour chocolate chip cookies in a sealed container or a resealable bag. You can place them in a zip-top bag or even in a closed plastic container.&nbsp;Please read about <a href=\"https:\/\/bakeschool.com\/why-chill-cookie-dough\/\">what chilling cookie dough does<\/a> before doing this!<\/li>\n\n\n\n<li>Store the raw dough in the refrigerator for 2 to 4 days. <\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Storing and baking raw cookie dough in the freezer: <\/strong>\n<ul class=\"wp-block-list\">\n<li><strong>Freeze scooped cookie dough<\/strong>: If you decide to freeze your portioned-out cookie dough unbaked, I recommend first freezing the scoops on a parchment-lined sheet pan until frozen solid, then transfer them to a zip-top freezer bag in a single layer preferably, being careful to remove all the air before zipping the bag closed. Then you can store them in the freezer for two months, according to the <a href=\"https:\/\/ask.usda.gov\/s\/article\/What-is-the-shelf-life-of-cookie-dough\" target=\"_blank\" rel=\"noopener\">USDA<\/a>.&nbsp;<\/li>\n\n\n\n<li><strong>To bake frozen chocolate chip cookie dough<\/strong>, simply place the scoops on a parchment-lined cookie sheet to bake from frozen, spacing them out with a few inches in between. Let the cookies defrost for 10 minutes at room temperature, while you preheat your oven. Keep in mind that the cookies will take longer to bake.
