If using salted butter, you may want to adjust the amount of salt in the dough.<\/li>\n\n\n\n<li><strong>sugar<\/strong>\u2014I used a combination of white granulated sugar and dark brown sugar. <\/li>\n\n\n\n<li><strong>eggs<\/strong>\u2014this recipe was developed with large eggs<\/li>\n\n\n\n<li><strong>vanilla<\/strong>\u2014I tested this recipe with pure vanilla extract. You can use artificial, but you may want to add less because it can be more potent<\/li>\n\n\n\n<li><strong>flour<\/strong>\u2014I tested this recipe with bleached all-purpose flour though unbleached will likely work fine<\/li>\n\n\n\n<li><strong>oats<\/strong>\u2014use large flake oats, also called rolled oats or old-fashioned oats. Do not use minute oats or quick oats which have a finer texture<\/li>\n\n\n\n<li><strong>salt<\/strong>\u2014I bake with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Diamond Crystal Fine Kosher Salt\" href=\"https:\/\/amzn.to\/3Yg6ygA\" data-linkid=\"40340\" data-shortcode=\"true\">Diamond Crystal Fine Kosher salt<\/a>. If using regular table salt, add half the amount or the cookies may be too salty<\/li>\n\n\n\n<li><strong>leavening<\/strong>\u2014the cookie dough is made with <a href=\"https:\/\/bakeschool.com\/focus-on-baking-soda\/\">baking soda<\/a>, not <a href=\"https:\/\/bakeschool.com\/what-is-baking-powder\/\">baking powder<\/a>. Do not substitute one for the other. They are not interchangeable without adjustments<\/li>\n\n\n\n<li><strong>chocolate<\/strong>\u2014I made these cookies with milk chocolate, specifically a 41% Alunga milk chocolate from Cacao Barry, which comes in 1-kilo resealable bags and is sold at IGA grocery stores in Quebec, as well as online via Vanilla Food Company<\/li>\n\n\n\n<li><strong>nuts<\/strong>\u2014I love the combination of peanuts with the milk chocolate chips. I used salted roasted peanuts to bump up the flavour.<\/li>\n<\/ul>\n\n\n\n<p>Please see the recipe card for the exact ingredients and quantities.<\/p>\n\n\n\n<h2 id=\"substitutions-and-variations\"   class=\"wp-block-heading\">Substitutions and Variations<\/h2>\n\n\n\n<p>Remember that in order to achieve the right texture and spread, you cannot omit an ingredient without making an adjustment elsewhere in the recipe:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Chocolate<\/strong>\u2014You can make these with white, milk, or dark chocolate, either chocolate chips or higher quality chocolate bars. If you want a c<\/p>\n\n\n\n<p>The tricks to baking thicker <a href=\"https:\/\/bakeschool.com\/thick-cookies-and-reasons-cookies-dont-spread\/\" title=\"Thick cookies and reasons cookies don't spread\">cookies that don't spread<\/a> when baked:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>make a thicker dough with a higher proportion of dry ingredients<\/strong> and lots of add-ins (oats, chocolate, peanuts) which will impede cookie spread.<\/li>\n\n\n\n<li><strong>chill the dough<\/strong> before baking, which means it will take longer for the butter in the dough to \"melt\" in the oven. Cookie spread is a balance of melting and setting. For soft cookies, use a silicone mat between the sheet pan and the cookies.
